1. Wood’s High Mountain Distillery

144 W 1st St., Salida, CO 81201

Housed in a 100-year-old building and featuring “Ashley,” an original 1880s German Pot Still (one of the world’s oldest stills currently in use), Wood’s High Mountain Distillery blends history with modern innovation.

The distillery prides itself on sourcing grains and potatoes locally from the San Luis Valley, where farmers grow varieties that thrive in the region’s dry climate and short summers, imparting a true taste of the Colorado Rockies.

Visitors to Wood Bros Distillery can experience the passion and craftsmanship firsthand at their Salida Tasting Room. Open daily, the tasting room offers flights, expertly crafted cocktails, and occasional live music, creating an atmosphere that the Travel Channel has dubbed one of “America’s best bars found in unexpected places.”

2. Leopold Bros

Among the exceptional Colorado distilleries we admire, Leopold Bros stands out for their dedication to traditional techniques and environmental sustainability. Founded by brothers Todd and Scott Leopold, this independent distillery combines Todd’s expertise in brewing and distilling with Scott’s background in engineering and conservation.

At Leopold Bros, the focus is on crafting spirits of the highest quality using the best possible methods. The distillery is committed to using only top-notch ingredients sourced from local family farms and orchards, such as rye from fields just 25 miles away and barley from Colorado’s San Luis Valley. They never rely on artificial flavors, colors, or additives, ensuring that each spirit showcases the natural flavors of its components.

What sets Leopold Bros apart is their adherence to traditional techniques, such as floor malting their own Colorado-grown grains on-site – a practice that only a handful of distilleries in North America employ. The distillery’s commitment to sustainability is evident in its zero-waste facility.

3. Mythology Distillery

Mythology Distillery was born from the shared love of adventure and storytelling of three Colorado natives. Founded in Denver’s Lower Highlands neighborhood in 2018, Mythology has quickly gained recognition for their exceptional spirits and commitment to sustainability.

The distillery’s portfolio, which includes whiskey, gin, vodka, and specialty spirits, has garnered over 60 national and international awards. Mythology’s success can be attributed to their experienced production team and the warm welcome they’ve received from the Colorado community.

In July 2023, Mythology opened a new campus in Steamboat Springs, featuring a state-of-the-art distillery, purpose-built rackhouse, and The Confluence, a cocktail bar, restaurant, and outdoor whiskey garden. This expansion not only allows Mythology to consolidate their production but also creates a unique customer experience in a stunning Colorado setting.

4. Distillery 291

In the foothills of the Rocky Mountains in Colorado Springs, Distillery 291 is a small-batch whiskey distillery that captures the essence of the American frontier.

The distillery’s flagship product, 291 Colorado Rye Whiskey, exemplifies its commitment to quality and character. Made from rye malt and sour mash, this whiskey is still distilled in a copper pot, aged in deeply charred American White Oak barrels, and finished with toasted Aspen staves. 

The result is a spirit garnered global recognition, including the title “World’s Best Rye” at the 2018 World Whiskies Awards and a Double Gold at the San Francisco World Spirits Competition.

5. Laws Whiskey House Distillery

1420 S. Acoma St, Denver, CO 80223

Laws Whiskey House stands out for its unwavering commitment to crafting premium whiskey without shortcuts. Located in the heart of Denver, this distillery dedicates itself to creating uniquely complex spirits using traditional methods and high-quality ingredients.

At Laws Whiskey House, the process begins with milling and cooking carefully selected grains to create a distinctive sour mash. The mash is then open-air fermented for four days before being distilled in a custom-made four-plate pot still. The resulting whiskey is aged for a minimum of two years in American White Oak barrels, ensuring a rich and nuanced flavor profile.

Visitors to the distillery can experience the passion and craftsmanship firsthand by taking a tour of the facility and enjoying a tasting in the welcoming tasting room. With a range of award-winning whiskeys to sample, including their flagship Four Grain Straight Bourbon, Laws Whiskey House offers a true taste of Colorado’s thriving distilling scene.
